Three Yogurt Creamy Cake

Ingredients
  

  • 3 plain yogurts (375g total) Whole milk yogurt recommended
  • 2 whole eggs (large)
  • 100 g granulated sugar Adjust to taste
  • 80 g all-purpose flour (type 45) Sift before using
  • 1 packet (8g) vanilla sugar
  • 1 tsp (5g) baking powder
  • 50 g unsalted butter melted and cooled

Method
 

  1. Preheat oven to 180°C (thermostat 6). Grease and flour a 20x10cm loaf pan, or line with parchment paper.
  2. In a bowl, whisk eggs, granulated sugar, and vanilla sugar until light and fluffy. The volume should double.
  3. Add yogurts and cooled melted butter to the egg mixture. Mix gently until combined.
  4. In a separate bowl, sift together flour and baking powder. Gradually add to the wet ingredients, mixing gently from bottom to top until smooth.
  5. Pour batter into prepared pan and bake for 35-40 minutes. Check for doneness with a knife inserted into the center.
  6. Let cool completely in the pan before unmolding and transferring to a wire rack to cool completely.
  7. Serve warm or cold.

Notes

Substitute plain yogurt with sheep's milk yogurt for a stronger flavor. Add fresh berries or chocolate chips for extra indulgence. A bit of lemon zest adds a refreshing note.
