Ingredients

  • 500 g spaghetti Choose a good quality for better flavor!
  • 80 g sweet onion finely minced
  • 1 tbsp extra virgin olive oil
  • 3 cloves garlic finely chopped
  • 700 g crushed tomatoes canned or equivalent fresh, peeled and crushed
  • salt and freshly ground black pepper to taste
  • fresh basil optional, for garnish
  • grated Parmesan cheese optional, for garnish

Equipment

  • Large Pot
  • Large skillet

Method

  1. Step 1: Bring a large pot of salted water to a boil. Add spaghetti and cook according to package directions, until al dente. Drain spaghetti, reserving about one cup of pasta water.
  2. Step 2: While spaghetti is cooking, heat olive oil in a large skillet over medium heat. Add minced onion and cook for 5-7 minutes, until tender and translucent.
  3. Step 3: Add minced garlic and cook for 1 minute more, until fragrant. Be careful not to burn the garlic.
  4. Step 4: Add crushed tomatoes to the skillet. Season generously with salt and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally, until slightly thickened.
  5. Step 5: Add cooked spaghetti to the tomato sauce. Mix gently to coat the pasta. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.
  6. Step 6: Serve immediately, garnished with fresh basil and grated Parmesan cheese, if desired.

Notes

You can add vegetables such as mushrooms, zucchini, or bell peppers to your tomato sauce. For a spicier touch, add a little chili. And if you don't have fresh basil, dried basil will do!
