Tagliatelles au Haddock Fumé

Ingredients
  

  • 250 g dried tagliatelle high-quality pasta preferred
  • 200 g smoked haddock flaked
  • 200 ml heavy cream
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 2 tbsp olive oil
  • 2 tbsp fresh chives chopped
  • salt to taste
  • freshly ground black pepper to taste

Method
 

  1. Cook tagliatelle according to package directions. Reserve some pasta water.
  2. While pasta cooks, heat olive oil in a skillet. Sauté onion until translucent (about 5 minutes).
  3. Add garlic and haddock; cook 2–3 minutes, until heated through.
  4. Stir in heavy cream; simmer until slightly thickened (2–3 minutes). Season with salt and pepper.
  5. Add pasta to the sauce, tossing to coat. Add pasta water if needed.
  6. Serve immediately, garnished with chives.

Notes

Haddock can be substituted with salmon, cod, or shrimp. Add mascarpone for a richer sauce, or lemon juice for freshness. Best served immediately.
