Ingredients
  

  • 2 ripe beefsteak tomatoes
  • 1 cucumber
  • 1 ripe avocado
  • 1/2 red onion
  • 150 g feta cheese
  • 2 handfuls arugula
  • fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt and freshly ground black pepper

Method
 

  1. Wash all vegetables thoroughly under cold water.
  2. Cut the beefsteak tomatoes into quarters.
  3. Cut the cucumber into half-rounds.
  4. Cut the avocado into regular cubes. Avoid handling them too much to preserve their texture.
  5. Finely mince the red onion.
  6. Crumble the feta coarsely.
  7. In a salad bowl, combine the arugula, tomatoes, cucumber, avocado, red onion and crumbled feta.
  8. Add the fresh basil leaves.
  9. Drizzle the salad with extra virgin olive oil and balsamic vinegar.
  10. Season generously with salt and freshly ground black pepper.
  11. Mix gently just before serving to preserve the freshness and texture of the ingredients.

Notes

Feel free to add other seasonal vegetables such as bell peppers, zucchini or radishes. You can also replace the feta with fresh goat cheese or mozzarella cubes. For a heartier salad, add some sweet corn kernels or grilled chicken cubes.
