Summer Nordic Salad with Smoked Salmon

A refreshing and easy summer salad with smoked salmon, potatoes, red onion, capers and a creamy yogurt dressing. Perfect for a light dinner, picnic or appetizer.

Ingredients
  

  • 600 g ratte potatoes or firm potatoes
  • 200 g smoked salmon cut into thin strips
  • 0.5 red onion finely minced
  • 1 tbsp capers
  • 150 g plain yogurt Greek yogurt preferred
  • 1 tbsp fresh lemon juice
  • 1 tsp sweet mustard
  • 2 tbsp fresh dill chopped
  • salt to taste
  • black pepper to taste

Method
 

  1. Wash potatoes thoroughly. Boil in salted water for 15-20 minutes until tender. Drain and let cool slightly. Cut in half or slices.
  2. In a bowl, whisk together yogurt, lemon juice, mustard, dill, salt and pepper. Adjust seasoning to taste. Set aside.
  3. In a large bowl, combine cooked potatoes, smoked salmon, red onion and capers.
  4. Pour yogurt sauce over salad and gently mix. Do not break the salmon.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to develop. Serve chilled, garnished with extra dill.

Notes

Add cucumber, cherry tomatoes, or hard-boiled eggs for a heartier salad. Substitute dill with chives or parsley. Add walnuts or slivered almonds for extra richness.
