Spicy Beef Noodles

Ingredients
  

  • 225 g rice noodles vermicelli or lo mein
  • 1 tbsp sesame oil
  • 300 g beef thinly sliced (sirloin or flank steak)
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp chili sauce Sriracha or sambal oelek
  • 1 tsp fresh ginger finely grated
  • 2 cloves garlic finely minced
  • 1 carrot finely grated or julienned
  • 1 red bell pepper finely minced
  • 2 green onions finely chopped, for garnish
  • fresh cilantro chopped, for garnish (optional)

Equipment

  • Large skillet or wok
  • Small bowl

Method
 

  1. Cook noodles according to package directions. Drain well and immediately toss with sesame oil to prevent sticking.
  2. In a small bowl, whisk together soy sauce, hoisin sauce, chili sauce, ginger, and garlic.
  3. Heat a little oil in a wok or large skillet over high heat. Add beef and stir-fry for 2-3 minutes until browned. Do not overcook.
  4. Add carrot and bell pepper. Stir-fry for 2-3 minutes until tender-crisp.
  5. Add cooked noodles and sauce to the wok. Toss to coat.
  6. Stir-fry for 2 minutes over medium-high heat, tossing constantly, to heat through and combine flavors.
  7. Serve immediately, garnished with green onions and cilantro (if using).

Notes

Add mushrooms, green beans, or shrimp for extra protein. Substitute chili sauce with another hot sauce to your liking. Omit ginger if desired.
