Ingredients

  • 200 ml coconut milk
  • 1 garlic clove finely chopped
  • 1 pinch red pepper flakes optional
  • 50 ml water to adjust consistency
  • 150 g peanut butter smooth or creamy
  • 2 tbsp soy sauce
  • 1 tbsp honey or coconut sugar
  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp fresh ginger grated
  • 1 tsp lime juice

Equipment

  • Small saucepan

Method

  1. In a small saucepan, heat 1 tbsp coconut milk over low heat. Add chopped garlic and grated ginger. Stir in curry, turmeric, and chili flakes (if using). Stir for 1 minute, until aromas are released.
  2. Add remaining coconut milk (190 ml), soy sauce, and honey (or coconut sugar). Mix well until homogeneous.
  3. Stir in peanut butter constantly until smooth and creamy.
  4. If sauce is too thick, gradually add water until desired consistency is reached. Simmer over low heat for 5 minutes, stirring regularly.
  5. Remove from heat and add lime juice. Mix gently to balance flavors.
  6. Serve warm or lukewarm. This sauce is ideal with chicken skewers, grilled vegetables, rice, and noodles.

Notes

Feel free to customize your sauce! You can add a tablespoon of crushed peanuts for extra crunch, or replace honey with maple syrup. For chili lovers, increase the amount of flakes or add a touch of fresh chili.
