- In a small saucepan, heat 1 tbsp coconut milk over low heat. Add chopped garlic and grated ginger. Stir in curry, turmeric, and chili flakes (if using). Stir for 1 minute, until aromas are released.
- Add remaining coconut milk (190 ml), soy sauce, and honey (or coconut sugar). Mix well until homogeneous.
- Stir in peanut butter constantly until smooth and creamy.
- If sauce is too thick, gradually add water until desired consistency is reached. Simmer over low heat for 5 minutes, stirring regularly.
- Remove from heat and add lime juice. Mix gently to balance flavors.
- Serve warm or lukewarm. This sauce is ideal with chicken skewers, grilled vegetables, rice, and noodles.
Notes
Feel free to customize your sauce! You can add a tablespoon of crushed peanuts for extra crunch, or replace honey with maple syrup. For chili lovers, increase the amount of flakes or add a touch of fresh chili.
