Rigatoni au Fromage

Ingredients
  

  • 200 g rigatoni pasta or other short pasta
  • 1 tbsp butter
  • 1 tbsp flour
  • 250 ml whole milk or half-and-half
  • 100 g sharp cheddar cheese grated
  • 1 tbsp Parmesan cheese grated, optional
  • salt, black pepper, paprika to taste

Method
 

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute, until smooth.
  3. Gradually whisk in cold milk until smooth. Cook, stirring constantly, until thickened (about 3-4 minutes).
  4. Remove from heat. Stir in cheddar and Parmesan (if using) until melted and smooth.
  5. Season with salt, pepper, and paprika to taste. Add pasta and toss to coat.
  6. Serve immediately, garnished with extra cheddar and/or paprika.

Notes

Other cheeses can be substituted for cheddar. Add sauteed vegetables for a vegetarian option. A pinch of nutmeg can also enhance the flavor. Leftovers can be stored in the refrigerator for up to 2 days.
