Pineapple-Vanilla Clafoutis

This pineapple-vanilla clafoutis is a simple and comforting summer dessert, ready in under an hour. It's easy to make and perfect for impressing friends and family.

Ingredients
  

  • 1 small fresh pineapple Use a ripe one for optimal flavor. Canned pineapple (well-drained) can be substituted.
  • 3 eggs
  • 20 g butter for greasing the dish
  • 25 cl whole milk or half-skimmed milk
  • 100 g flour
  • 100 g powdered sugar
  • 1 vanilla pod
  • 1 tbsp powdered sugar for serving

Method
 

  1. Prepare the pineapple: Remove the crown, cut into quarters, peel, remove the core, and slice thinly.
  2. Vanilla infusion: Split the vanilla pod, scrape out the seeds, and add to the milk with the pod. Heat gently until warm (do not boil). Remove the pod.
  3. Prepare the batter: Whisk eggs and sugar until pale and fluffy. Gradually add flour, then the warm vanilla milk, whisking until smooth.
  4. Assemble and bake: Preheat oven to 180°C (350°F). Grease the baking dish. Arrange pineapple slices, pour batter over, and bake for 40 minutes, or until golden and set.
  5. Finish: Dust with powdered sugar. Let cool slightly before serving. Can be served warm or cold.

Notes

Add other tropical fruits like mango or papaya. Substitute coconut milk for a richer flavor. Add slivered almonds before baking for extra crunch.
