Perfect Summer Salad

This summer salad is a burst of sunshine and summer flavors, easy and quick to prepare, ideal for a light meal or a gourmet appetizer. Prepare yourself for a simple, yet incredibly effective delight!

Ingredients
  

  • 2 beefsteak tomatoes ripe
  • 1 cucumber fresh
  • 1 ripe avocado
  • 1/2 red onion
  • 150 g feta cheese
  • 2 handfuls arugula
  • a few fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt and freshly ground black pepper

Method
 

  1. Wash the tomatoes and cucumber thoroughly. Cut the tomatoes into medium-sized wedges and the cucumber into thin rounds.
  2. Peel the ripe avocado and remove the pit. Cut the flesh into evenly sized cubes. Tip: Store them in a bowl with a little lemon juice to prevent them from turning brown.
  3. Finely chop the red onion.
  4. In a large bowl, combine the tomatoes, cucumber, avocado, red onion, arugula, and basil leaves.
  5. Crumble the feta cheese over the salad.
  6. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Adjust the seasoning to your liking. I sometimes add a pinch of sugar to balance the acidity.
  7. Pour the dressing over the salad and mix gently. Serve immediately, or refrigerate for a few minutes for a well-chilled salad.

Notes

You can add other ingredients according to your desires: black olives, capers, mozzarella cubes, cherry tomatoes… For a more original version, replace the feta with fresh goat cheese. Don't hesitate to experiment! The most common mistake? An overripe avocado! Choose it firm. You can prepare the vegetables in advance, but add the avocado and dressing just before serving to preserve their freshness.
