- Step 1: Wash zucchini thoroughly. Cut off the ends and slice into fry-sized sticks. Aim for even sticks for uniform cooking.
- Step 2: In a bowl, combine breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper. Mix well. In a separate bowl, lightly beat the eggs.
- Step 3: Dip each zucchini stick into the beaten eggs, ensuring it's fully coated. Then, roll in the breadcrumb-Parmesan mixture, pressing gently to ensure it adheres well.
- Step 4: Preheat your oven to 200°C (thermostat 6-7), using the fan-assisted setting is recommended. Line a baking sheet with lightly oiled parchment paper. Arrange the zucchini fries in a single layer, avoiding overcrowding. Lightly drizzle or spray with olive oil.
- Step 5: Bake for 20–25 minutes, flipping halfway through with a spatula, until golden and crispy. Keep an eye on them to prevent burning.
- Step 6: Serve your Parmesan zucchini fries hot. They can be accompanied by a yogurt and garlic sauce, homemade ketchup, or simply enjoyed plain.
Notes
Feel free to add herbs de Provence to the breadcrumb mixture for a fresh touch. You can substitute Parmesan with Pecorino or Grana Padano. For a spicier version, add some Espelette pepper!
