Mini Croque-Monsieur Apéritifs

A revisited classic, these mini croque-monsieur are incredibly easy to make and so delicious they disappear in a flash. Prepare to impress your friends with this simple and delicious recipe.

Ingredients
  

  • 8 slices bread Use classic sandwich bread or experiment with whole grain bread
  • 100 g Emmental or Gruyère cheese grated
  • 100 g chicken ham thinly sliced. For a vegetarian version, substitute with sun-dried tomato or zucchini slices.
  • 20 g butter softened
  • 2 eggs
  • 2 tbsp milk
  • 1 tsp mustard Dijon mustard recommended
  • salt and freshly ground black pepper

Method
 

  1. In a bowl, whisk together eggs, milk, mustard, a pinch of salt, and a pinch of pepper.
  2. Preheat oven to 200°C (thermostat 6-7). Lightly butter one side of each slice of bread. On a baking sheet lined with parchment paper, place a slice of bread, buttered side down.
  3. On each slice of bread, arrange a few thin slices of chicken ham, then cover with a layer of grated cheese. Cover with a second slice of bread, buttered side up. Repeat to make all your mini croque-monsieur.
  4. Generously brush the top of the mini croque-monsieur with the egg-milk mixture.
  5. Bake for 10 to 15 minutes, or until golden brown and crispy. Watch the baking carefully to avoid excessive browning.
  6. Serve hot.

Notes

Feel free to add sliced mushrooms, bacon, or even some pesto for a Mediterranean touch. For a more sophisticated version, replace the chicken ham with Serrano ham or speck. To prevent your mini croque-monsieur from being too dry, make sure the cheese is melted before removing them from the oven.
