- In a bowl, whisk together eggs, milk, mustard, a pinch of salt, and a pinch of pepper.
- Preheat oven to 200°C (thermostat 6-7). Lightly butter one side of each slice of bread. On a baking sheet lined with parchment paper, place a slice of bread, buttered side down.
- On each slice of bread, arrange a few thin slices of chicken ham, then cover with a layer of grated cheese. Cover with a second slice of bread, buttered side up. Repeat to make all your mini croque-monsieur.
- Generously brush the top of the mini croque-monsieur with the egg-milk mixture.
- Bake for 10 to 15 minutes, or until golden brown and crispy. Watch the baking carefully to avoid excessive browning.
- Serve hot.
Notes
Feel free to add sliced mushrooms, bacon, or even some pesto for a Mediterranean touch. For a more sophisticated version, replace the chicken ham with Serrano ham or speck. To prevent your mini croque-monsieur from being too dry, make sure the cheese is melted before removing them from the oven.
