Marbled Vanilla-Chocolate Muffins

Remember the enchanting smell of freshly baked muffins, that irresistible softness… Well, today, we're revisiting this classic with a marbled vanilla-chocolate muffin recipe so easy and quick that you'll never buy them again! I promise, it's a real treat, and even the smallest fingers can easily participate in the preparation.

Ingredients
  

  • 4 eggs (large)
  • 100 g dark chocolate (70% cacao minimum, finely chopped)
  • 80 g granulated sugar
  • 150 g wheat flour T55
  • 140 g unsalted butter melted and slightly cooled
  • 1/2 packet baking powder (approx 5g)

Method
 

  1. Step 1: Preheat oven to 200°C (thermostat 6-7). Lightly grease a 10-cup muffin tin or line with paper liners.
  2. Step 2: In a large bowl, whisk together the eggs and sugar until the mixture is pale and fluffy. Gently incorporate the cooled melted butter, whisking until light and homogeneous.
  3. Step 3: Add the sifted flour and baking powder. Gently mix with a rubber spatula or whisk until the batter is smooth and without lumps. Avoid overmixing, as this could make your muffins tougher.
  4. Step 4: Melt the dark chocolate in a bain-marie or microwave, ensuring it doesn't burn. Let cool slightly before incorporating into the batter.
  5. Step 5: Divide the batter into two equal portions. Incorporate the melted chocolate into one of the two portions, mixing gently until you obtain a homogeneous and marbled batter.
  6. Step 6: Using two tablespoons, alternate tablespoons of plain batter and chocolate batter in each cup of the muffin tin, creating the marbled effect. Have fun creating pretty patterns!
  7. Step 7: Bake for 15 to 20 minutes. Check doneness by inserting a knife blade into the center of a muffin: the blade should come out clean and dry.
  8. Step 8: Let the muffins cool in the tin for a few minutes before unmolding and letting them cool completely on a wire rack. Serve and enjoy!

Notes

Feel free to add chocolate chips, chopped nuts or hazelnuts to the batter for even more deliciousness! You can also replace the dark chocolate with milk or white chocolate. For a healthier version, replace part of the flour with spelt flour.
