Ingredients
  

  • 100 g powdered sugar
  • 200 g unsalted butter cold, cut into pieces
  • 3 egg whites cold
  • 200 g all-purpose flour sifted
  • 0.5 vanilla bean seeds extracted

Method
 

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together cold butter and powdered sugar until light and fluffy. Use an electric mixer for best results.
  3. Add egg whites one at a time, mixing well after each addition.
  4. Gently fold in the sifted flour and vanilla bean seeds until a smooth batter forms. Avoid overmixing.
  5. Using a piping bag with a small round tip, pipe 5cm long strips onto the prepared baking sheet, leaving space between each.
  6. Bake for 8-10 minutes, or until edges are lightly golden. Watch carefully, as ovens vary.
  7. Remove from oven and let cool completely on the baking sheet before transferring to a wire rack.

Notes

Add a pinch of salt to enhance the vanilla flavor. For a richer taste, add a few drops of almond extract. Lemon extract can be substituted for vanilla for a zestier flavor. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
