Homemade Hot Sauce

Ingredients
  

  • 200 g fresh red chili peppers (Serrano or JalapeƱo, for example)
  • 100 g fresh garlic peeled
  • 50 g fresh coriander chopped
  • 2 tbsp cane sugar
  • 1 tbsp fine salt
  • 150 ml rice vinegar
  • 2 lime juice and zest
  • 1 tsp ground cumin
  • 1 tsp freshly ground black pepper

  • Food processor or powerful blender
  • Medium-sized saucepan
  • Jars and lids

Method
 

  1. Wash the chili peppers thoroughly. Remove the stems and, for a less spicy sauce, remove the seeds. Caution: wear gloves to avoid irritation.
  2. In a food processor or powerful blender, combine all ingredients (chilies, garlic, coriander, sugar, salt, vinegar, lime juice and zest, cumin, and pepper). Blend until perfectly smooth.
  3. Transfer the mixture to a medium-sized saucepan. Bring to a boil over medium heat. Then reduce heat to low and simmer for 10 minutes, stirring regularly to prevent sticking.
  4. While the sauce is cooking, sterilize the jars and lids by immersing them in boiling water for 10 minutes. Drain completely before use. This step is essential for proper preservation!
  5. Pour the hot sauce into the sterilized jars, leaving about 1 cm of space below the rim to allow for expansion.
  6. Seal the jars tightly with the sterilized lids. Turn the jars upside down for 5 minutes to create a vacuum and ensure better preservation. Let cool completely at room temperature before storing in a cool, dark place. The sauce will keep for up to 6 months. Once opened, refrigerate and consume within 2 months.

Notes

Feel free to customize your sauce! You can add other ingredients such as fresh ginger, red onion, or even fruits like mangoes or pineapples for more exotic notes. For a less spicy sauce, use milder peppers or remove the seeds. And for a sweeter version, reduce the amount of vinegar.
