Gratin de Crozets aux Poireaux, Comté et Chorizo

Un gratin réconfortant de crozets, poireaux, Comté et chorizo, facile et rapide à préparer.

Ingrédients principaux
  • 250 g Crozets These small Savoyard pasta bring a unique texture to the gratin.
  • 2 Leeks Finely sliced. Choose firm leeks for better texture. Wash thoroughly!
  • 100 g Chorizo Cut into small dice. I particularly like mild chorizo, but it's up to you!
  • 100 g Comté cheese Grated. A quality Comté will make all the difference! Grate it yourself for optimal results.
  • 30 cl Thick cream For a creamy and delicious texture. You can use crème fleurette for an even richer result.
  • 1 Garlic clove Finely minced
  • Salt and freshly ground black pepper Adjust to taste
  • Nutmeg A pinch, grated
  • Butter As needed for the baking dish and cooking the leeks. I use salted butter, but unsalted will also work.

Equipment

  • Oven Preheat to 180°C (thermostat 6)
  • Large saucepan For cooking crozets
  • Frying pan For cooking leeks and chorizo
  • Baking dish Butter generously
  • Large bowl For mixing ingredients

Method
 

  1. Preheat oven to 180°C (thermostat 6). Generously butter a gratin dish. Cook the crozets according to the instructions on the package in a large saucepan of boiling salted water. Drain thoroughly and set aside. Tip: You can cook them a little 'al dente', as they will finish cooking in the oven.
  2. Melt a knob of butter in a frying pan over medium heat. Add the sliced leeks and cook gently for about 8 to 10 minutes, until tender and translucent. Add the diced chorizo and minced garlic. Continue cooking for 2 to 3 minutes, stirring regularly, to develop the flavors.
  3. In a large bowl, combine the cooked crozets, sautéed leeks and chorizo. Add half of the grated Comté and the cream. Season with salt, pepper and grated nutmeg. Mix well. Pour the mixture into the buttered gratin dish. Sprinkle the remaining grated Comté on top.
  4. Bake the gratin for 20 to 25 minutes, or until golden brown and bubbling. The gratin is cooked when the top is golden brown and the center is hot and creamy.
  5. Let the gratin rest for a few minutes before serving hot. Ideally served with a green salad for a touch of freshness.

Notes

N'hésite pas à personnaliser ce gratin ! Tu peux ajouter des champignons de Paris sautés, des lardons fumés, ou même des dés de pommes de terre pour plus de consistance. Pour une version plus légère, remplace la crème fraîche par de la crème allégée ou du lait de coco. Bien égoutter les crozets : Des crozets trop humides rendront le gratin détrempé. Ne pas surcharger le plat à gratin : Laisse un peu d'espace pour que le gratin puisse gonfler à la cuisson. Préparation à l'avance : Tu peux préparer la garniture (poireaux, chorizo) à l'avance et la conserver au réfrigérateur. Conserve le gratin au réfrigérateur pendant 2 à 3 jours dans un récipient hermétique. Tu peux le réchauffer au four ou au micro-ondes.
