- Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion. Cook, stirring occasionally, until vegetables are tender and slightly browned (about 8-10 minutes).
- Add garlic and oregano to the pot. Stir and cook for 1 minute more, until fragrant.
- Pour chicken broth into the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes to allow flavors to develop.
- Add egg noodles to the simmering soup. Cook for 5-7 minutes, or until al dente.
- Add shredded chicken to the soup. Cook for 2-3 more minutes, until heated through.
- Season soup with salt and black pepper. Taste and adjust seasoning as needed.
- When serving, divide soup into bowls and garnish generously with fresh chopped parsley.
Notes
Feel free to add other seasonal vegetables such as mushrooms, zucchini, or peas. You can also substitute the chicken with shredded turkey, tofu, or even vegetables for a vegetarian version. For a creamier soup, add a tablespoon of crème fraîche when serving.
