Ingredients
  

Marinade:
  • 45 ml low-sodium soy sauce
  • 15 ml fresh ginger finely minced
  • 15 ml brown sugar
  • 15 ml rice vinegar
Other Ingredients:
  • 2 salmon fillets 150g each, preferably fresh
  • 1 tbsp vegetable oil sesame or sunflower
  • 1 carrot julienned
  • 1/2 red bell pepper minced
  • 1/2 zucchini julienned
  • snow peas or broccoli florets
  • sesame seeds optional
  • fresh cilantro or chives chopped, optional

Method
 

  1. In a bowl, whisk together soy sauce, minced ginger, brown sugar, and rice vinegar until sugar dissolves.
  2. Place salmon fillets in a shallow dish. Pour marinade over salmon, ensuring it’s fully coated. Cover and marinate in the refrigerator for 20-30 minutes (longer is better, but 20 minutes is sufficient).
  3. Heat vegetable oil in a skillet or wok over medium-high heat. Add carrots, red bell pepper, and zucchini. Sauté for 2-3 minutes until tender-crisp. Add snow peas or broccoli and cook for 1 more minute. Remove from heat and set aside.
  4. Remove salmon from marinade (reserve marinade!). Heat a skillet over medium-high heat. Place salmon fillets in the skillet and cook for 3-4 minutes per side, until cooked through and slightly caramelized. Be careful not to overcook; it should remain moist inside.
  5. Add sautéed vegetables to the skillet with the salmon. Drizzle salmon and vegetables with some of the reserved marinade to create a glossy glaze. Cook for 1 minute, stirring gently, to coat evenly.
  6. Serve immediately. Garnish with sesame seeds and fresh cilantro or chives, if desired.

Notes

Feel free to customize your recipe! Add other vegetables like mushrooms, green beans, or asparagus. For a spicier touch, add a little red pepper powder or a few drops of chili oil. If you don’t have rice vinegar, you can substitute with white vinegar or lemon juice.
