Method
- Melt the dark chocolate and butter together in the microwave at 750 W for 2 minutes. Stir until smooth and let cool slightly.
- In a separate bowl, whisk the egg yolks with the granulated sugar until pale and slightly mousse-like. Then gently mix in the sifted flour until you have a homogeneous paste.
- Add the melted chocolate-butter mixture to the egg yolk preparation, gently mixing with a spatula until fully incorporated.
- In a clean and dry bowl, beat the egg whites until stiff peaks form with an electric mixer.
- Gently fold the beaten egg whites into the chocolate mixture in several batches, using a spatula, lifting the mixture to preserve as much volume as possible.
- Pour the mixture into a buttered and floured bundt pan (or individual ramekins). Bake in a preheated oven at 180°C (fan-assisted) for 35 minutes. Baking time may vary slightly depending on your oven.
- Let cool slightly before unmolding and serving. The heart of the fondant should remain runny!
Notes
You can add a pinch of salt to enhance the chocolate flavor. For a touch of originality, add chocolate chips, red fruits or a teaspoon of vanilla extract. If you don't have a bundt pan, individual ramekins will work perfectly.
