Fondant au Chocolat

Ingredients
  

  • 250 g dark chocolate at least 70% cacao
  • 125 g unsalted butter at room temperature
  • 8 eggs separated yolks and whites
  • 150 g granulated sugar
  • 50 g flour sifted

Method
 

  1. Melt the dark chocolate and butter together in the microwave at 750 W for 2 minutes. Stir until smooth and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with the granulated sugar until pale and slightly mousse-like. Then gently mix in the sifted flour until you have a homogeneous paste.
  3. Add the melted chocolate-butter mixture to the egg yolk preparation, gently mixing with a spatula until fully incorporated.
  4. In a clean and dry bowl, beat the egg whites until stiff peaks form with an electric mixer.
  5. Gently fold the beaten egg whites into the chocolate mixture in several batches, using a spatula, lifting the mixture to preserve as much volume as possible.
  6. Pour the mixture into a buttered and floured bundt pan (or individual ramekins). Bake in a preheated oven at 180°C (fan-assisted) for 35 minutes. Baking time may vary slightly depending on your oven.
  7. Let cool slightly before unmolding and serving. The heart of the fondant should remain runny!

Notes

You can add a pinch of salt to enhance the chocolate flavor. For a touch of originality, add chocolate chips, red fruits or a teaspoon of vanilla extract. If you don't have a bundt pan, individual ramekins will work perfectly.
