Endives Sautées à la Crème

Ingredients
  

  • 6 endives Choose firm, green endives
  • 20 cl heavy cream Use heavy cream for a richer sauce, or crème fraîche
  • 20 g butter
  • 1 tbsp lemon juice freshly squeezed
  • salt and freshly ground black pepper to taste
  • 1 pinch nutmeg grated

Method
 

  1. Wash endives thoroughly and remove the hard, bitter base. Cut endives in half lengthwise.
  2. Melt butter in a large skillet over medium heat. Add endives, cut-side down, and sauté for 3-5 minutes until lightly browned.
  3. Drizzle endives with lemon juice. Reduce heat to low, cover, and cook for 10 minutes, turning halfway through for even cooking.
  4. Add heavy cream and gently stir to coat endives.
  5. Season with salt, pepper, and nutmeg. Simmer over low heat for 5 more minutes until the sauce slightly thickens.
  6. Serve hot. Pairs well with salmon, poultry, or grilled red meat.

Notes

Add a crushed garlic clove during cooking for a more intense flavor. Heavy cream can be substituted with coconut cream for an exotic touch, or coconut milk for a lighter version.
