- Wash endives thoroughly and remove the hard, bitter base. Cut endives in half lengthwise.
- Melt butter in a large skillet over medium heat. Add endives, cut-side down, and sauté for 3-5 minutes until lightly browned.
- Drizzle endives with lemon juice. Reduce heat to low, cover, and cook for 10 minutes, turning halfway through for even cooking.
- Add heavy cream and gently stir to coat endives.
- Season with salt, pepper, and nutmeg. Simmer over low heat for 5 more minutes until the sauce slightly thickens.
- Serve hot. Pairs well with salmon, poultry, or grilled red meat.
Notes
Add a crushed garlic clove during cooking for a more intense flavor. Heavy cream can be substituted with coconut cream for an exotic touch, or coconut milk for a lighter version.
