Creamy Cajun Steak Rigatoni with Parmesan Sauce

Ingredients
  

  • 450 g tender steak (bavette or rumsteak) cut into 2-3 cm cubes
  • 2 tbsp Cajun seasoning
  • 300 g rigatoni
  • 250 ml heavy cream
  • 100 g Parmesan cheese finely grated
  • 2 tbsp unsalted butter
  • 2 cloves garlic finely minced
  • salt and freshly ground black pepper to taste
  • fresh chives or flat-leaf parsley chopped, for garnish

Method
 

  1. Step 1: Generously season steak cubes with Cajun seasoning. Let rest for at least 15 minutes at room temperature.
  2. Step 2: Boil rigatoni according to package directions until al dente. Reserve about 120 ml of pasta water.
  3. Step 3: Melt butter in a large skillet over medium-high heat. Add minced garlic and cook for 1-2 minutes. Add steak cubes and sear until golden brown and cooked to your liking. Remove and set aside.
  4. Step 4: In the same skillet, pour in heavy cream. Add grated Parmesan cheese and stir constantly over low heat until cheese is melted and sauce is smooth and creamy. Season with salt and pepper.
  5. Step 5: Add cooked rigatoni to the creamy sauce and mix gently. Add seared steak cubes. Mix until pasta is evenly coated in sauce. Add pasta water if sauce is too thick.
  6. Step 6: Serve immediately, garnished with fresh chives or parsley.

Notes

You can substitute the steak with chicken, pork, or even shrimp for a lighter variation. For a spicy touch, add some chopped fresh chili peppers to the sauce. Sautéed mushrooms before adding the cream will add extra flavor. Let your creativity run wild!
