Cookies Salés au Jambon et Fromage

Ingredients
  

  • 150 g all-purpose flour
  • 75 g unsalted butter cold, cut into small cubes
  • 2 large eggs
  • 100 g ham diced
  • 100 g grated cheese gruyere, cheddar, or other hard cheese
  • 0.5 tsp baking powder
  • salt and freshly ground black pepper to taste
  • 1 tbsp fresh herbs parsley, chives, or thyme, chopped

Method
 

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  3. Cut in cold butter using your fingertips until the mixture resembles coarse crumbs.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in ham, cheese, and herbs. Mix gently until combined.
  6. Form into small balls (about 2-3 cm in diameter) and place them on the prepared baking sheet, leaving about 5 cm between each ball.
  7. Flatten slightly with a spoon or your hand.
  8. Bake for 12-15 minutes, or until lightly golden and edges are firm.
  9. Let cool on baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Variations: Substitute bacon for ham, or add olives or sun-dried tomatoes. For a spicier kick, add some Espelette pepper. Can be frozen before or after baking.
