Method
- Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and pepper.
- Cut in cold butter using your fingertips until the mixture resembles coarse crumbs.
- Add eggs one at a time, mixing well after each addition.
- Stir in ham, cheese, and herbs. Mix gently until combined.
- Form into small balls (about 2-3 cm in diameter) and place them on the prepared baking sheet, leaving about 5 cm between each ball.
- Flatten slightly with a spoon or your hand.
- Bake for 12-15 minutes, or until lightly golden and edges are firm.
- Let cool on baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Variations: Substitute bacon for ham, or add olives or sun-dried tomatoes. For a spicier kick, add some Espelette pepper. Can be frozen before or after baking.
