- Step 1: Preheat your oven to 180°C (Thermostat 6).
- Step 2: In a large skillet, pour a good drizzle of olive oil and heat over medium heat. Add the thinly sliced red onion and let it sweat until tender and translucent (a few minutes). Then, add the minced garlic and cook for another minute.
- Step 3: Add the fresh spinach to the skillet. It will make a mountain at first, but don't worry, it will reduce quickly. Cook just until it wilts and becomes tender. Season with salt and pepper to your taste. Remove the skillet from the heat and set this flavorful mixture aside.
- Step 4: Take a medium-sized gratin dish (which can hold about 6 to 8 portions). Lightly oil it so nothing sticks.
- Step 5: Layer the gratin. Arrange a first layer of thin sweet potato slices on the bottom of the dish. Then, cover with a portion of the spinach-onion-garlic mixture you prepared. Scatter a generous amount of crumbled feta over it. Repeat these layers: sweet potatoes, spinach mixture, feta... until you run out of ingredients.
