Ingredients

  • 120 g unsalted butter softened
  • 300 g all-purpose flour
  • 120 g granulated sugar
  • 1 pinch fine salt
  • 120 ml whole milk
  • 8 g vanilla sugar 1 packet
  • 8 g baking powder 1 packet
  • 2 eggs medium, at room temperature
  • 50 g dark chocolate chopped

Equipment

  • Large bowl
  • Mixing Spoons or Electric Mixer
  • Muffin Tin
  • Toothpick

Method

  1. Chop the dark chocolate coarsely and set aside.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the butter-sugar-egg mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until the batter is smooth and without lumps.
  4. Fill greased or paper-lined muffin cups to ⅔ capacity. Sprinkle the chopped chocolate on top of each muffin, pressing lightly into the batter.
  5. Preheat oven to 180°C (350°F). Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
  6. Let the muffins cool in the tins for a few minutes before removing them to a wire rack to cool completely. Serve and enjoy!

Notes

Feel free to add chocolate chips, nuts, or dried fruits to your batter! You can also replace dark chocolate with milk or white chocolate. For a richer version, add a tablespoon of Nutella or other chocolate spread.
