- In a bowl, mix mustard, lemon juice, olive oil, Herbs de Provence, salt, and pepper. Whisk well.
- Add chicken cubes to the marinade and ensure they are all well coated. Cover the bowl and let marinate in the refrigerator for at least 1 hour, or ideally 2 to 4 hours for better flavor.
- Thread marinated chicken pieces, chorizo slices, and bell pepper pieces onto wooden skewers (previously soaked in water for 30 minutes to prevent burning), alternating ingredients.
- Preheat your barbecue or plancha to medium-high heat. Cook the skewers for 10-12 minutes, turning regularly, until the chicken is fully cooked and the chorizo is golden brown. Check the internal temperature of the chicken with a meat thermometer; it should reach 74°C.
- Serve the skewers immediately. They are delicious with a green salad, grilled vegetables, or your favorite side dish.
Notes
You can replace the sweet chorizo with a spicy chorizo for more heat, or add other vegetables such as zucchini or onions. Mushrooms would also be delicious! For a more original version, try using old-fashioned mustard or a honey and soy marinade.
