Chicken and Chorizo Skewers with Herbs de Provence

Ingredients
  

  • 500 g chicken breasts cut into 2-3 cm cubes
  • 180 g sweet chorizo cut into 1 cm thick slices
  • 1 red bell pepper deseeded and cut into 2-3 cm pieces
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Herbs de Provence
  • salt and freshly ground black pepper to taste

Method
 

  1. In a bowl, mix mustard, lemon juice, olive oil, Herbs de Provence, salt, and pepper. Whisk well.
  2. Add chicken cubes to the marinade and ensure they are all well coated. Cover the bowl and let marinate in the refrigerator for at least 1 hour, or ideally 2 to 4 hours for better flavor.
  3. Thread marinated chicken pieces, chorizo slices, and bell pepper pieces onto wooden skewers (previously soaked in water for 30 minutes to prevent burning), alternating ingredients.
  4. Preheat your barbecue or plancha to medium-high heat. Cook the skewers for 10-12 minutes, turning regularly, until the chicken is fully cooked and the chorizo is golden brown. Check the internal temperature of the chicken with a meat thermometer; it should reach 74°C.
  5. Serve the skewers immediately. They are delicious with a green salad, grilled vegetables, or your favorite side dish.

Notes

You can replace the sweet chorizo with a spicy chorizo for more heat, or add other vegetables such as zucchini or onions. Mushrooms would also be delicious! For a more original version, try using old-fashioned mustard or a honey and soy marinade.
