Ingredients
  

For the Biscuit Dough
  • 115 g unsalted butter softened
  • 100 g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 250 g all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
For the Topping
  • 10-12 pineapple rings canned, well-drained
  • granulated sugar for sprinkling
  • candied cherries optional

Method
 

  1. Cream together softened butter and granulated sugar until light and fluffy (about 2-3 minutes). Beat in egg and vanilla extract until well combined.
  2. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  3. Cover the bowl and refrigerate the dough for at least 1 hour.
  4. Preheat oven to 175°C (350°F). Line two baking sheets with parchment paper.
  5. Take about 2 tablespoons of dough and form into a ball. Place on a baking sheet and flatten slightly. Place a well-drained pineapple ring on top of each biscuit. Add a candied cherry in the center, if desired.
  6. Lightly sprinkle granulated sugar over the top of each biscuit. Bake for 12-14 minutes, or until edges are lightly golden brown. Watch carefully to avoid overbaking; the center should remain soft.
  7. Let biscuits cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. Serve biscuits the same day, slightly warm or at room temperature.

Notes
