Apple and Yogurt Flan

This apple and yogurt flan is a simple and quick dessert, perfect for a family snack or an impromptu dessert with friends. It's a soft and fragrant delight that evokes the comforting aroma of homemade cakes.

Ingredients
  

  • 2 Golden or Reine des Reinettes apples firm and slightly tart apples
  • 2 plain yogurts (250g)
  • 3 eggs
  • 100 g caster sugar
  • 80 g flour
  • 1 sachet baking powder (about 8g)
  • 20 cl milk whole milk is ideal
  • 1 tsp vanilla extract
  • 1 pinch salt
  • butter for greasing the mold

Method
 

  1. Preheat oven to 180°C (thermostat 6). Generously butter a tart or gratin dish. I personally use a 24cm diameter springform pan.
  2. Peel, core, and thinly slice the apples. Evenly distribute the apple slices on the bottom of the buttered mold.
  3. In a bowl, beat the eggs and sugar until light and fluffy. An electric whisk is ideal, but you can do it by hand; it just takes a little longer.
  4. Add the plain yogurts, milk, and vanilla extract to the egg-sugar mixture. Mix gently but thoroughly.
  5. In a separate container, sift together the flour and baking powder. Add this mixture to the previous mixture, gradually incorporating and mixing gently until a smooth batter is obtained without lumps. Add a pinch of salt.
  6. Gently pour the batter over the apples in the mold, spreading evenly.
  7. Bake for 35 to 40 minutes, or until the flan is golden brown and firm to the touch. Check the doneness with the tip of a knife: it should come out clean.
  8. Let the flan cool completely in the mold before carefully unmolding it. Patience is the mother of all good things, let it cool properly.
  9. Serve the flan warm or cold, as preferred. I personally love warm flan with a scoop of vanilla ice cream!

Notes

Feel free to add spices such as cinnamon or nutmeg for a more intense flavor. You can also replace the apples with pears or peaches. For a more gourmet version, add some dark chocolate chips when incorporating the dry ingredients. To avoid a too dry flan, do not overcook. Watch the cooking carefully and check with the knife blade. Preparing the batter in advance is possible; you can keep it in the fridge for a few hours before baking.
