Apple and Mascarpone Cake

This simple and delicious apple and mascarpone cake will take you back to those comforting childhood afternoons. Easy to make and incredibly delicious, it's a real treat for everyone.

Ingredients
  

  • 4 apples (Golden or Granny Smith)
  • 4 large eggs
  • 200 g mascarpone
  • 3 tbsp heavy cream
  • 20 g butter
  • 200 g powdered sugar adjust to taste
  • 140 g flour (type 45)
  • 1 packet (10g) baking powder
  • 1 pinch salt

Method
 

  1. Preheat oven to 180°C (thermostat 6).
  2. In a bowl, whisk sugar and eggs until the mixture whitens. Add mascarpone and cream. Mix at medium speed for 20 seconds.
  3. Add flour, baking powder, and salt. Mix at medium speed for 20 seconds, until a smooth batter is obtained.
  4. Melt butter. Gently incorporate into the batter. Mix at low speed for 15 seconds.
  5. Peel, core, and cut the apples into medium-sized pieces. Add to the preparation and mix gently.
  6. Pour the preparation into a silicone cake mold (ideally) or a buttered and floured mold (20-22 cm long).
  7. Bake for 30 to 35 minutes. Check doneness by inserting a knife into the center; it should come out dry.
  8. Let cool completely in the mold before unmolding. Serve cool.

Notes

Feel free to add spices such as cinnamon, nutmeg, or ginger for a more autumnal touch. You can also replace apples with pears, or add dried fruits such as raisins or cranberries. For an even softer cake, use room temperature eggs. Avoid overmixing the batter after adding the apples.
